Monday- Grilled honey soy pork chop, baked potato, mixed veggies
Tuesday- Homemade Chili, Wheat Rolls
Wednesday- Leftovers
Thursday- Breaded tilapia, brown rice and a veggie
Friday- Eating at in-laws
Saturday- Eating at in-laws
Sunday- Veggie Chowder (unless there are a lot of leftovers sent home with us from the weekend activities)

Meal Plan Monday November 12
I had a great time in Nevada. It was hard to leave and come back to a bunch of snow! I got home late last night but we still managed to throw a little meal together with the help of a Costco rotisserie chicken. I have a lot to do today because I'm hosting a little party tonight. Need to figure out treats and such! It should be fun!
Monday - Rotisserie Chicken, Baked Potato, Green Salad
Tuesday- Chicken Salad Sandwiches, Grapes (using leftover chicken)
Wednesday - Spaghetti with Meat Sauce, Spinach Salad
Thursday - Leftovers
Friday - Apple, Bacon Spinach Ravioli (I'm going to try it with turkey bacon)
Saturday - Fish Tacos, Pear Slices
Sunday - Pork Chops, Yams, Peas, Rolls
Hoping to try a new pork chop recipe. Don't really have time to search around right now. Maybe I can post next week if I do.

Menu Plan Monday Oct 29
I did well sticking to my meal plan but I went to the store twice last week. The second time was just for fun to attend a "keeping it local" event. There were a lot of free samples and good deals so we ended up buying a few things.
C hasn't always been a big fan but he was loving fish last week! I hid some salmon in his rice and he ate it. Then when we had breaded tilapia he loved it! He was chowing down on big pieces. I was surprised that he didn't like the pumpkin soup at all! He has always loved every type of squash I've ever offered.

Breakfast for dinner! Pancakes, Eggs, Texas Grapefruit, OJ
This week I'm using up leftovers and keeping it simple. All recipes I've planned have been tried in the past.
Lately I've been using plain greek yogurt to make tuna salad. It tastes the same to me and greek yogurt is a healthy alternative to mayo. Give this substitute a try to get more calcium and a boost of probiotics.
*I don't use a recipe for my chicken pot pie casserole but I've linked one that is similar. I basically use up veggies I have in the fridge and throw in a few frozen. I usually saute some onions, garlic and bell peppers. I mix the veggies with a cream of something soup and cooked chicken. Top with biscuits and bake. I should experiment with making my own topping but haven't yet. It's great as a leftover.
Next week I will not be posting a menu plan because my husband is heading to Atlanta for a conference and I'm heading to Nevada to hang out/help out my mom for a week. My mom is currently undergoing chemotherapy for cancer. She is doing pretty well but of course is not feeling very well and doesn't have much of an appetite. Hoping to be able to cook her up some good meals and treats! If you have suggestions for good freezer meals or such for cancer patients send them my way! I'd love to leave her with a stash.
I'm hoping to write up a nutrition/healthy living post later this week so stay tuned! :)

"I'm new" Meal Plan Monday- Oct 22
I've tossed the idea of starting a blog around for some time. I've decided to give it a go! I have a few goals concerning meal planning and hope this blog can help keep me motivated and on track. Through a few other RD blogs I've noticed this meal plan monday deal that was started by I'm an Organizing Junkie. It seems pretty genius to me and will help give me more than enough ideas to get serious about this meal planning business!
I will post my weekly plan each Monday. My goal is to cut grocery shopping down to once a week and eating out to once or twice a month in order to stay under our monthly grocery budget. Our family is mostly one income because I work really part time right now. We are trying to stick to a tight budget as my husband is also working on his Master's degree part time. The grocery budget has been a little over $200 a month to feed three. Not bad but I'm a stickler and think we can get it under $200 and also save by not eating out. I want to show you that eating healthy does not have to be expensive! More importantly it's just so much healthier folks! And MOST importantly, eating healthy will help you feel and function better in your daily life!
So here is my first official Meal Plan Monday :

Baked Salmon, Brown Rice and Green Beans
Tuesday:
Tacos with Beans, Strawberries
Wednesday:
Leftovers/ On your own (This is the night Husband is at class so usually it's going to be leftovers)

Chicken Alfredo and Roasted Acorn Squash

Chili Party at church: I'm planning to take White Chicken Chili
Saturday:
Breaded Tilapia, Broccoli, Peaches

Roasted Pumpkin, Squash, Apple Soup and Homemade Rolls
I think I was craving fish and squash this morning as I was planning. I didn't end up making salmon last week so it's bumped to today. I must say that I was really impressed with how much C (my son) loved spaghetti squash. He inhaled it last night and today at lunch! Don't be afraid to offer new veggies! You just might be surprised what they'll eat with a little spaghetti sauce on it!

Moving More For the Fun of It
I love the fall. I love the feeling of change in the air. Maybe the change is the autumn air has wrought a little change in me! Lately I have started jogging along a bike trail near my house. It follows a little stream. I've discovered there's something energizing about turning off the noise and jogging with nothing but the crunchy autumn leaves, the rushing of a nearby stream, my thoughts and the occasional oohs and ahhs of a toddler. My cute little sidekick occasionally peaks back at me from the jogging stroller to say, "Hiiiii." He's my little cheerleader.
Exercise and I have had a pretty good relationship the past few months. However, our relationship has been pretty rocky, off and on for about 5 years or so. But I think I've learned a few things about myself and how to make this relationship thrive.
I know some people think they have never had a loving relationship with exercise. I'm of the opinion it's something we are born with but some of us lose it after a while. Just spend a little time around a toddler and you will see that they love being active and exploring the world. Kids don't call it exercise. They call it fun!
When was the last time you thought exercise was fun?
I grew up in a small town. Sports was what i did for fun! I participated in sports growing up and did a sport every season in high school. I loved it! Then college came. I got busy with studying, working and social life. I exercised occasionally. But like I said before... off and on....not very consistent.
By the time I finished school, I was married. He got a job. I did a 10 month post-grad internship to become a registered dietitian. This internship was basically working full time (40 hours/wk but you don't get paid you actually pay tuition) and having a lot of homework/projects to complete when you get home. SO it was busy. And I was pregnant. So exercise and I took a break. Other than walking (eventually waddling) the hospital floors and stairs we didn't bother seeing each other. Then I had a baby. The first year was rough. Mostly due to lack of sleep. I was in survival mode. But a refreshing walk or occasional attempt at jogging reunited me and my old friend occasionally.
A few months ago I decided to join a gym just 30 seconds down the street. Not your traditional gym. It's more of a set of classes you can pick and chose what to attend. The classes are 98% women. And the options sounded exciting: yoga, kickboxing, zumba, etc. I started attending with no purpose other than to get a break from mommyhood. My first class was yoga. I remember driving those 30 seconds home and thinking, "Wow, I feel really good!" (don't make fun of me for driving... it's an industrial/creepy/not good lighting area) Then I got up at 5:45 am to try kickboxing. That is early in case you didn't know. But it turned out to be really fun and really addicting. I was enjoying myself! I have tried a lot of different classes. Some I love more than others. I've started playing volleyball and basketball a couple days a week with women I met through church groups. I feel so lucky to have a so many options for exercise and to have a supportive husband who provides free babysitting doesn't mind a turn watching our crazy child.
I've learned a few things about myself these past few months. I love being active. I need that time to feel like me again. I thrive with a routine that is flexible and diverse. I don't enjoy doing the same thing everyday. I really love the social aspect of exercising.
So what can you do to find that inner child? Find what motivates you. I don't think my recipe is successful for everyone. Some personalities thrive with a consistent routine or working towards and focusing on a certain goal. If you've only ever tried running and you absolutely hate it, then try biking or a local aerobics or yoga class. Libraries often have many workout dvds available to check out for free! Enlist a friend or spouse to help you discover new activities. Be brave! Branch out! Learn ways to move for the fun of it. Share your ideas in the comments below!

Menu Plan Wednesday
Menu Plan Monday WEDNESDAY : )
I've been attempting to plan weekly menus for some time now. My biggest problem is follow through. Sometimes I fail to account for fussy baby days or I'd rather just make a quick bean and cheese burrito instead days.
